* 2 teaspoons olive oil
* 1/2 cup chopped onions
* 1 medium sweet potato or yam, diced into small cubes
* 1/2 cup chopped bell peppers (optional)
* 1 tablespoon water
* Fresh ground pepper
Heat the oil in a skillet over medium heat. Add the onions, saute for 2-3 minutes. Add the sweet potatoes and bell peppers and a tablespoon water. Cover and cook for 15 minutes or until the potatoes are soft. Toss often to prevent burning. Serve, sprinkling with fresh ground pepper.
